The brisket came on time like advertised. I was joking around with my wife on if she ever seen anything so beautiful lol. 2nd te ever doing a brisket but this was my first wagyu. The edges were slightly overcooked but everything else was amazing. Alomg with my lollipop beef short ribs it was the talk of our Easter dinner. Didn't get the bark that I wanted but I got a few ideas next time. Definitely getting another one and if yall can please add lollipop short ribs to the menu

I plan on smoking it this weekend in fact. It delivered on the date promised in excellent condition...looked great with just the right amount of exterior fat unlike the brisket I’ve bought in grocery stores where you spend a hour trimming 3 lbs of fat off a 15 lb brisket.
